Sweet Potato Heaven 101

My name is Alex, I have an extreme obsession. It is carotene and it makes me orange, it is the carotene in sweet potatoes. I love it, it give me peace and tranquility throughout the day.

Now, if this was truly the case, I believe I would have a serious problem. I truly just love sweet potatoes and cannot count on my fingers the amount I can consume in a week. If you know me well, you are already informed of this. My car’s name is sweet tater, my feet and hands are orange, I put a sweet potato in the oven at 6:00 AM every morning before practice and I have at times eaten 4 in a day. Is there anything else you need to know about me?

Oh yes, I love Jesus, love to RUN and attend the best school in the entire world. Baylor University.

Now, I intend someday on creating my own cafe. I have now began to plan on going to culinary school after Baylor! How fun would that be? Too much fun, too much food and lots of happy tummies, THATS WHAT!

Here are a few secrets to my madness, if you become addicted, don’t blame me, its the carotene.

Sweet Potato Recipe number 1

Sweet & Spicy Spaghetti


  • 1 spaghetti squash (cut in half)
  • 1 medium sweet potato
  • ½ cup of salsa or pico-de-gallo
  • Salt and pepper to taste
  • 1/8 tsp. of garlic powder
  • Feta

How to? I knew you’d ask!

  1. Cook the spaghetti squash at 350 in the oven, make sure to cut it in half – YES THIS IS THE HARDEST THING YOU WILL EVER DO IN YOUR LIFE. Cook it for 1 & ½ hours.
  2. Cook the sweet potato in the same oven for the same amount of time. This recipe does not work with a sweet potato microwaved.
    1. To cook the sweet potato successfully, make sure to poke it with a fork multiple times and place it on top of foil. If you wrap the sweet potato in foil you lose some of the nutrients of this amazing vegetable.
  3. When the spaghetti squash is done cooking, place it on a cutting board, use a fork and scrape out all of the SPAGHETTI in the squash. Try to not burn your beautiful hands.
  4. After this, heat up a nonstick pan on medium heat. Once heated up, scoop the sweet potato out of the skin and plop it on top of the stove with the pico-de-gallo or salsa, pepper, salt and garlic. Sautee until warm and add in the spaghetti squash until well combined.
  5. DONE! Put in your favorite bowl, gobble up and top with feta.Sweet Potato Recipe number 2

Sinfully Dark Sweet Tater Oats

  • This is one of my all time favorites, I always feel as if I am rewarding myself when I consume this amazing dish.
  • It can be made in two different ways, both are sinfully fantabulous


  • 1 medium sweet potato
  • ¼ cup of oats (I prefer Irish oatmeal – and no instant) anything non-instant is perfect.
  • ¼ of a 3oz bar of dark chocolate – you could also do 3 small squares of pre-packed dark chocolate or about ¼ cup of dark chocolate chips. I prefer sugar free dark chocolate. (Please don’t do Hershey’s dark chocolate, the better quality is the best – you will thank me later)
    • Additional dark chocolate for top
  • ½ of a banana – this is optional if you do not like bananas I like the sweetness it adds as well as the creaminess, you can substitute ¼ of a cup of vanilla soymilk. (please do one or the other)
  • Optional 2 tbsp. of Powdered peanut butter
  • Possible Toppings:
    • Any type of peanut butter/almond butter
    • silvered almonds/peanuts/pecans
    • Strawberries/banana/raspberries/blueberries/pineapple
    • Chopped up chocolate protein bar
    • Want to get SINFUL?
      • Add graham cracker crumbs and marshmallows.

How to make? I knew you’d ask soon!

  1. Have the sweet potato pre-cooked (please do it in the oven – please) at 350 for 1 & ½ hours minimum.

  2. This is where the meal can be done two different ways, you can add the sweet potato INTO the oatmeal or put the oatmeal on top of the sweet potato. I love both; today I had this with the oatmeal on top.
    1. Add the oats, dark chocolate (save some for topping), (sweet potato if you wish – everything but the skin please), ½ cup of water, ½ banana (if you want to do the soy milk instead do not do it before cooking it), 2 tbsp. of powdered peanut butter (optional – doesn’t really need to be replaced).
      1. Cook ingredients in the microwave for 1 ½ minutes.
    2. Once the oatmeal is cooked, if you want to add vanilla soymilk please add it now, stir, and cook for an additional 20-30 seconds, if not please skip this step.
    3. Now since your oatmeal is cooked either top the oats on your sweet tater or if you added the sweet tater into your oats then NO NEED! (:
    4. Top the dish off with any of your favorite toppings.
    5. NOW YOU ARE DONE! I know there seems to be multiple steps, but this can be done super duper fast, and with the fat of the dark chocolate and carbohydrates of the sweet potato, you will be satisfied. I promise.

  Sweet Potato Recipe number 3


 Sweet Tater Hashin Hash

  • This is an easy and quick dish that fits any season!
  • Can serve 1-2 people


  • 1 sweet potato
  • ¼ cup of white onion
  • 1/8 tsp. Garlic powder
  • Salt and pepper to taste
  • 6-10 whole portabella mushrooms
  • (Pick one or more of these ingredients) – 1 red apple, 2 cups of cauliflower, ½ medium zucchini, 3-6 oz. of carrots, 6-10 Brussel sprouts (cut in half) or 1 red skinned potato.
  • ¼ tsp. cinnamon
  • 1/8 tsp. nutmeg
  • Coconut oil spray/pam
  • Optional Toppings:
    • Scrambled Egg whites, feta, turkey/chicken sausage, a sunny side up egg.


  1. Skin the sweet potato, I usually simply do this with a knife, cut into chunks however your heart so desires.
    1. Cut up the onions, mushrooms and whatever vegetables you have chosen.
  2. Pre-heat oven to 475
  3. Place cut up vegetables on a sprayed and foil-lined baking sheet.
  4. Lightly mist the vegetables with coconut oil spray.
  5. Combine all the spices together and sprinkle on top of vegetables.
  6. Bake at 475 for 13-`15 minutes, broil for the last 1-2 minutes (this all depends on your preferred crispiness and oven).
